"Fried" Chicken:
Ingredients:
2-3 tbsp olive oil
1 lb boneless, skinless chicken
3/4 cup brown rice flour
Paprika to taste
Garlic salt to taste
Fresh black pepper to taste
lemon pepper to taste
Instructions:
In a skillet on medium heat,pour 1 tbsp of oil. Add chicken tenderloins and cook until insides are no longer pink, but outsides are browned.
Aside in a bowel, combine brown rice flour and spices. Experiment with spices to find the taste you like. Set bowel aside.
Dip chicken in flour mixture until coated and return to skillet. Discard remaining flour. Add remaining olive oil to skillet. Check the bottom, and flip when browned. Ready to serve when both sides are browned.
